Fruit Soup

 

Ingredients

2 Passion Fruits
2 vanilla bean pods
1/2 cored pineapple - chopped
1 papaya - peeled and chopped
1 mango -peeled and chopped
1/2 cantaloup - peeled and chopped
3 cups cubed watermelon
1 cup of coconut milk
1/2 cup cream of coconut
1 teaspoon nutmeg
1/4 cup spiced rum


Directions

  1. Cut passion fruits in half and scoop out the seeds and throw them away. Squeeze the passion fruit into a strainer and save the juice. Cut the vanilla bean pods in half length wise and take out the seeds and set them aside.
  2. In a food processor, combine half the passion fruit juice and the vanilla seeds. Add half the pineapple, papaya, mango, cantaloupe, watermelon, coconut milk and coconut cream. Blend until smooth.
  3. Place mixture in a large bowl and repeat the process with the remaining ingredients.
  4. Lastly, stir in the nutmeg and rum. Refrigerate for about an hour.
