Ingredients
2 Passion Fruits
2 vanilla bean pods
1/2 cored pineapple - chopped
1 papaya - peeled and chopped
1 mango -peeled and chopped
1/2 cantaloup - peeled and chopped
3 cups cubed watermelon
1 cup of coconut milk
1/2 cup cream of coconut
1 teaspoon nutmeg
1/4 cup spiced rum
Directions
- Cut passion fruits in half and scoop out the seeds and throw
them away. Squeeze the passion fruit into a strainer and save the juice. Cut the vanilla bean pods in half
length wise and take out the seeds and
set them aside.
- In a food processor, combine half the passion fruit juice and the
vanilla seeds. Add half the pineapple, papaya, mango, cantaloupe, watermelon,
coconut milk and coconut cream. Blend until smooth.
- Place mixture in a large bowl and repeat the process with the remaining
ingredients.
- Lastly, stir in the nutmeg and rum. Refrigerate for about an hour.
