Ingredients
2 lbs cassava - yuca
4 ounces ginger root
2 tsp vanilla
1 lb brown sugar (to taste)
2 can coconut milk
1 tsp grated nutmeg
2 tablespoon melted butter or margarine
Directions
- Peel cassava and ginger and wash.
- Grate cassava and ginger.
- Add vanilla, nutmeg, coconut milk and brown sugar (to taste) to grated cassava. Mix well.
- Add melted margarine and mix well.
- Pour into greased 3qt baking dish/pan.
