Ingredients

  • 4 Lbs of goat meat
  • 2 Lemons cut into halves
  • 2 tbsp of vinegar
  • 1 tbsp of vegetable oil
  • 1/2 tsp of powdered oregano
  • 2 tsp of mashed garlic
  • 2 Large green bell peppers
  • 1 Medium red onion cut into four quarters
  • 4 Plum tomatoes cut into
  • 4 quarters
  • 2 Small jalapeno peppers finely chopped
  • salt to taste
  • 1/2 cup of tomato sauce

Directions

  1. Clean the goat meat with the lemons.
  2. In a mixing bowl add the meat, season with Onion, Garlic, pepper, oregano and vinegar.
  3. In a skillet, heat the oil, add the sugar, stir until brown,then add the meat.
  4. Stir until the meat has a light brown color. Add 1 cup of water, cover,simmer at low heat for 30-35 minutes.
  5. Adjust water until the meat is tender, add the remaining ingredients.
  6. Add salt to taste. Reduce liquid to obtain a thin sauce.
